Which thermostat is better for a too hot area the 16o degree or the 180 degree ?

i live in kuwait which is a very hot country and my engine is stock till now :), i am intending to put up some extra horsepower in the future, so i need the ideal thermostat that will reduce the engine heat and keep it coool
